Got Blueberries? Try this Healthy Blueberry Bread Recipe
Summer is on its way, and with it comes loads of fresh fruits and vegetables, making healthy easier and more satisfying than ever.
Last weekend, we took a family trip to Costco. (Pathetic, I know. But it does have its virtues: carts with room for two children to sit, cheap clothes for kids, cases of Pellegrino, and a meal’s worth of tasty morsels to sample).
Of course, the management at Costco is very savvy. Like everyone else there, we go with a strict list of items to purchase and come home with a load of additional things we just had to have.
This time it was a huge box of blueberries.
Scientists have been extolling the virtues of blueberries for some time now. In case you hadn’t heard, blueberries are loaded with antioxidants, which destroy free radicals. They are high in fiber, vitamin C and vitamin K. They are low in sodium and fat. So why not buy a box so big that you have to eat fistfuls at every meal to actually finish them before they go bad?
That’s exactly what I was thinking. Until I got home. Then, I realized I had to create other ways to get these blueberries eaten. As my family loves baked goods just as much as the next one, this weekend I came up with a healthy blueberry bread. Below is the recipe. Your family will enjoy the taste, and you will love the nutritional value.
Blueberry Bread:
1 1/2 cups all purpose flour
1 1/2 cups whole wheat flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 eggs
2 cups milk
1/3 cup canola oil
2 1/2 cups blueberries
Grease a 9x5x3 inch loaf pan.
In large mixing bowl combine wet ingredients: eggs, milk, and oil.
In medium bowl combine dry ingredients: flour, sugar, baking powder, salt, baking soda.
Add dry ingredients to wet ingredients and beat.
Fold in blueberries.
Spoon batter into pan.
Bake at 350F for 75 minutes or until toothpick inserted in the center comes out clean.
