I finally got the Halloween costumes washed and put away for next year. Now, I’m turning my attention to the upcoming holidays. There is nothing I like more than the preparation: creating the menu, cooking, and shopping for the people I love.
This past week, I got started on breakfast for Thanksgiving day. Breakfast, you ask? Yes. I find if I don’t start planning and preparing the least grandiose meals of the weekend, they don’t receive the attention they deserve. Pulling out the cereal and making a panicked run to the pastry shop at the last minute is likely to happen if I don’t prepare now, and because I hate mornings and prepared foods, I will avoid this at all costs.
Thanksgiving morning calls for something easy. If you are basting turkey, making cranberries, stuffing, and four of your favorite vegetable recipes, chances are you won’t want to think for a second about what your hungry guests will eat when they arise. (Doesn’t it seem like all they do is descend upon you and eat constantly?)
So take care of it now. I’ve decided on simple fare: in the morning I will put out hard boiled eggs, sliced cantaloupe with prosciutto, yogurt, cereal, and homemade banana bread.
The banana bread has become somewhat of a specialty in my house, because we always seem to have bananas rotting in the fruit bowl and it is the easiest way to get rid of them. As a result, I’ve been tinkering with a recipe for several years now, trying to achieve the perfect balance of health and taste. Another bonus? My kids love to help me make it. It’s a fun, instructive activity we can all do together.
Here’s the latest iteration of the recipe. Enjoy:
1/2 cup sugar
1/2 cup butter
2 eggs
4 bananas
1/3 cup milk
1 tsp vanilla
1 cup all purpose white flour
1 cup whole wheat flour
1/2 cup chopped walnuts (if your kids will tolerate it)
1 tsp baking soda
1/2 tsp salt
