The good researchers of Louisiana State University found an excuse we can all use to indulge in the name of health. At the 247th National Meeting and Exposition of the American Chemical Society, they shared their findings, which scientifically linked consumption of dark chocolate to a reduction in the risk of stroke.
The scientists discovered that good microbes in your gut, like lactic acid and bifidobacterium, love dark chocolate just as much as the rest of us do. When we eat it, the bacteria grow and ferment it, producing anti-inflammatory compounds that reduce the risk of stroke. Combine your chocolate with whole fruit and you may increase the benefit, they say.
I know microbes and fermentation don’t sound too appetizing, but it is a sweet ending, isn’t it?
